a striking red to reddish-orange teardrop shape tomato that averages
an amazing 6 to 12 ounces. It's mildly sweet flavor makes it ideal
as a slicer but also excellent for sauces. Indeteriminate, 75 to

Baller: A true pear shaped, red roma type tomato
that grows 3 inches long and has a mild flavor. Indeterminate. 71

Big Mama Hybrid: Plum shaped tomatoes that are 5
inches long and about 3 inches wide. Indterminate, 80 days.
Campbell's or Hunts: These processors of
great tasting canned tomato products also have their own unique
brand of tomatoes. These are usually round instead of plum
shaped, but are great for making sauces just the same. Look
for Campbell 1327 variety, and Heinz 1350 VF, and Heinz 1439
Hungarian Italian: Abundant producer of
deep red, pear shape tomatoes that are excellent for sauces
and pastes. Rated a top quality paste tomato. Indeterminate,
80 days.
Opalka: A Polish Heirloom that produces
abundant yields of large 5 inch long paste tomatoes. Sweet
to eat but great for paste. Bull horn shape, bright red. Considered
one of the top rated paste tomatoes for sauces, salsa, paste,
etc with it's rich, sweet flavor. Indeterminate, 85 days.
Polish Linguisa: A productive, heirloom
Roma that produces some large, sausage shaped fruit weighing
up to 10 ounces (284 grams) and measuring 1 to 2 inches wide
and 3 to 4 inches long, sweet and delicious in flavor, excellent
for sauce or paste, good enough to eat. Indeterminate, 73-76
days.
Rosalies Paste: 2-3 inches wide and four
inches long, pointed, bright red, 90 days, indeterminate.
San Marzano: Considered by many chefs to
be the best sauce tomato in the world. The flesh is thicker
and has fewer seeds than the roma, with a stronger taste that
is "bittersweet." Bright red, blocky-pear shape
fruit, 3 to 3.5 inches long, weighing 5 to 6 ounces. Indeterminate,
80 days. The San Marzano Redorta variety
grows to 8 ounces and is good to eat or for sauces. Heirloom.
